Easy to Make Tomato, Cucumber and Mint Salad




When you are looking for a go-to comfort food to boost your mood, you can choose a quick, healthy option.

What You Need
1 big cucumber cut into two halves and then sliced into pieces
2 big tomatoes, chopped roughly
1/3 cup of vinegar
1-teaspoon salt and a single tablespoon of sugar
½ of onions chopped
2 tablespoons of virgin olive oil
1/3 fresh mint leaves (widely available in the supermarkets)
Pepper (cayenne or black pepper would do)
Four slices of sandwich brown bread

What You Need To Do
In a big bowl, mix the cucumbers, vinegar, salt and sugar.  Allow the cucumber to absorb the flavors for an hour as you stir occasionally.

Then, add the onions, mint, tomatoes, and olive oil. Mix the ingredients by tossing. Then, add pepper to taste.

You can munch on this salad with left over chicken. Alternatively, you could make a sandwich by placing the salad in between the slices of bread and you are good to go!
